Peter Lehmann's story with Noble Semilon goes back many years, when Andrew Wigan had the good fortune of experiencing vintage within the vineyards at Chateau d'Yquem, home to the greatest sweet white wine in the world. What he had assumed to be spoilage, was in fact Botrytis Cinerea. Traditionally, Botrytis affected wines are the most complex and longest lived of all. The Barossa Valley is an ideal region for late harvest, given the quality of local Semillon and the warm conditions that continue well into vintage.

Known as the mentor to many Barossa growers and winemakers, Peter Lehmann is a man of his word. Egerton E S Dennis settled on ninety acres of vineyard at McLaren Flat after serving in the RAAF. Ege pioneered the production of Mead and sold his crop of wine grapes to some of Australia's most eminent brands before founding his own label in 1971, with the object of converting the high quality fruit into pure, estate made wines. Since establishment, Dennis Wines have collected hundreds of medals and accolades at national and international taste offs, twice claiming the revered Bushing King awards for best wine at the McLaren Vale Winemakers Exhibition.

Egerton Dennis made a major contribution to the establishment of McLaren Vale as an internationally renowned wine region. His son remains a hands on viticulturallist who knows every vine by name. An immensely satisfying Aussie style of Grenache from the Peter Dennis estate vineyard adjacent the preeminent terroirs of Tatachilla and Kangarilla Roads. Fermented on skins for optimal extractions before feeding through a gentle basket press, a year's maturation in Fench and American oak barriques achieves a brightly lit style of lifted cherry fruit and lithe, supple tannins.

Exclusively estate grown Cabernet Sauvignon from the Peter Dennis Nindethana vineyard at McLaren Flat on the eastern side of McLaren Vale. The beautifull property is fortuitously situated at the base of Mount Lofty Ranges where the soil, climate and rainfall are a bliss for viticulture. Fruit is vinified in traditional open fermenters followed by an old fashioned basket press and fifteen months oak maturation. An intense Cabernet nose of currant, sweet violets and cassis resolves on a mouth filling McLaren Vale palate, layered with lozenge and dark berry fruit characters.

Petaluma have long availed themselves of the choicest sites in Adelaide Hills, an unfair advantage, after pioneering viticulture here in the 1970s. Sauvignon Blanc is the runaway success of the Adelaide Hills region, yielding a quality which has gained stature for its brisk regional eloquence, throughout the world of wine. Parcels have been collated from prime vineyards near Balhannah and Woodside, crafted through the full measure of Petaluma excellence, into a lovely drink now style, the perfect match to oversized scallops and the freshest fishes.

The excellence of Petaluma's stately Cabernet wines is due in great part to the virtue of Coonawarra's most distinguished sites. The fabulous Terra rossa soils and calcrete limestone deposits underneath, contribute to the majesty of Petaluma Coonawarra. Five choice blocks of estate Coonawarra vine are the source of fruit, for the construct of a rich yet elegant, mouthfilling Cabernet Sauvignon, slightly more approachable than the opulent estate flagships, fashioned to the cherished and enduring, profoundly Petaluma styling.

By one of the nation's most illustrious and enduring wineries, Petaluma have won Distinguished Langtons Classification for their eminent editions of Chardonnay. Choice vineyards at Lenswood and Balhannah in the Adelaide Hills have been trained for decades to yield harvests of world class fruit. White Label is identifiably Adelaide Hills, fruit forward and revitalizingly fresh, the Chardonnay of choice, to drink immediately upon release, while awaiting for her eminent sibling to evolve and come of age.

Tiers is a bottle aged Chardonnay vinified from fruit grown to a spectucalar site, the first Adelaide Hills vineyard to be planted in the twentieth century.

Langtons Distinguished Classification. A powerful yet elegant wine, enriched by the extravagance of barrel ferments, new French oak and battonage. The paradox of supreme quality is always how to achieve in the vineyard, concentration and structure without sacrificing the finesse which is a hallmark of the world's best Merlot. Coonawarra's innate suitability for this varietal, and Petaluma's distinguished sites, offer a mosaic which maximises the quality of this exceptional wine.

One of the new world's most distinguished Riesling, a sophisticated effort, floral and delicate and poised, Petaluma displays refreshing lemon and lime characters coupled with a wonderful balance which has been the hallmark of this elite vineyard since the inaugural 1979 vintage. At 1670 feet above sea level, Hanlin Hill is magnificent for its higher elevation and superior exposure to the cooling afternoon sea breezes. Another great edition in a long succession of superb Clare Valley Rieslings from the distinguished Vineyard at Hanlin Hill.

From an almost perfect Riesling vineyard, careful pruning, sorting and selection, ensures that only the healthiest grapes are included. One of Australia's perennially feted Riesling, from fruit picked off old vines on Petaluma's Hanlin Hill Vineyard, planted in 1968 to the most easterly slope and highest aspects in all of Valley Clare. Late picked for optimal flavour development, yet paradoxically elegant and dry, the ideal choice to accompany grilled whiting, cornish hen or the traditional Coquilles St Jacques.

Petaluma employs hand pruning and hand picking, foreign practices in Coonawarra, for an enduring red blend that's now an iconic Australian wine and regional benchmark.

The nation's most long lived Merlot, a regional beacon of the varietal since since inaugural vintage of 1990. An assemblage of the best parcels from the distinguished Evans and Sharefarmer Vineyards. Both these mature sites yield a precious harvest of the most outstanding fruit. The palate is full, luscious and rich with loads of black fruits and cedar oak. A fully fleshed, immaculately detailed Merlot of satin textures and the most amazingly affable tannins, mesmerisingly perfumed by the heady notes of creme de cassis, Coonawarra violet, eucalypts and mint.

Excellent Langtons Classification. One of Australia's icon wines, perennially feted and internationally recognized. A highly structured, integrated red that's immense in stature, and always offers long ageing potential.

Predominantly Cabernet Sauvignon and Merlot with smaller portions of Shiraz and Malbec. The old vines at Evans Vineyard are hand pruned and hand picked, and are treated as dear old individuals. This is the first use of Shiraz since 1982 and only the second vintage with Malbec, since the first Petaluma Coonawarra vintage in 1979. A wonderful ripe, full flavoured dry red wine to decant and breathe before service. The individual batches were assembled after a total of twenty two months in oak before a light egg white fining and no filtration.

Excellent Langtons Classification. The batches of fruit were kept intentionally small, with further selectivity during the winemaking to ensure only fully ripe barrels were incorporated into the finished Cuvee.

Established by industry doyen Len Evans, the Petaluma vineyards are at the very heart of Coonawarra, invaluable winegrowing terroirs which are infused by the mineral rich terra rosa soils and stimulated by the balmy maritime breezes of the Southern Ocean. A fully Certified Organic Shiraz, picked off vines which have been husbanded to a holistic, environmentally sustainable viticulture, spicy, brooding and engagingly aromatic, a long dry red with elegant velvet tannins, peppery plum fruit characters and piquantly perfumed, cool Coonawarra finish.

A simply delicious wine, big and powerful yet all delicacy too, aromas of pineapples and sherbet-like confection impeccably backed by the florid qualities of the topical and spicey Viognier.

The brilliant maritime climes of McLaren Vale yield a richly styled Cabernet wine of penetrating fruit characters and firm but assuaging tannins. The people behind Pertaringa are amongst the most eminent Australian wine industry identities, viticulture on the Pertaringa vineyards however, remains a very hands on affair. Vines are closely managed for trim harvests of small but intensely flavoured Cabernet grapes, a concentration of berry characters in the juices and a measure of solid yet refined tannins within the skins.

Pertaringa are fortuitously positioned at the foothills of Mount Lofty Ranges, the perfect location for grapes, by virtue of a temperate environment and deep clay loam soils. Undercover is a reference to the McLaren Vale tradition in supplying other regions with bespoke parcels of fruit, ultimately to be vinified into some of Australia's most favourite wines. Undercover is an old vine Shiraz, selected from Pertaringa's five decade old vineyard, hand crafted by winemaking supremos Geoff Hardy and Ben Riggs. Undercover is the essence of McLaren Vale Shiraz.

Even the finest Merlot is rarely seen front and centre as a pure varietal wine. Pertaringa manage an endowment of the finest McLaren Vale vineyards and can call on harvests of superior fruit for the construct of an exclusively Merlot wine. Layers of fleshy plum flavour, velvet textures and pliable tannins define the structure and style of Stage Left, essentially a splendid food friendly mode of Merlot, the first choice to accompany quails wrapped and grilled in pancetta or delicately braised game over red wine Jus and pureed parsnip grits.

Sauvignon Blanc is the first grape variety of vintage to ripen. Local fauna have a naturally sweet tooth and find the juicy, sugar filled berries irresistible. Scarecrows are an old solution to a timeless problem but the delinquent criiters have never learned to distinguish the artfully stuffed rags from the real thing. Those grapes which survive the pilferage are crafted by the Pertaringa team into an engagingly aromatic wine with clean, crisp palate, the ideal choice for service alongside moreton bay bug tails dressed in paprika butter.

Pertaringa was established during the early 1980s at the intersection of Rifle Range and Hunt Roads. It was a rough time for the Australian wine industry and growers were ripping up their vineyards, some of them old and invaluable, to qualify for government grants. Pertaringa founder Geoff Hardy came from a long line of McLaren Vale winemakers and welcomed the challenge. Hunt & Rifle is a stately Cabernet wine of beautifully fragrant fruit characters and refined, graceful tannins, a suitable match to braised beef cheek sous glaze or succulent sticky pork.

The signs came very early that Pertaringa was growing an exceptional quality of Shiraz, trading much of their early vintages to Hardy Wines. Over The Top is a reference to the Pertaringa pursuit of excellence, delivering a taste of McLaren Vale to the enthusiast in demand of superior Shiraz. Pertaringa outperforms many national flagship wines at international competitions, a favourite of Qantas Business Class, the Shiraz of choice to serve alongside trois couleurs pepper steak or seared Wagyu.

Bonfire Block was a dilapidated old vineyard site, destroyed by fire in the 1980s, she has been replanted to Semillon. Geoff Hardy's K1 Vineyard at Kuitpo is only a few miles away from McLaren Vale as the crow flies. The maritime surrounds of the Bonfire Block yield generously flavoured fruit, augmented by batches of finer, cool climate Semillon from the Adelaide Hills. Bonfire Block is always crafted to a styling which displays the vagaries of vintage and outstanding intensity of Semillon grapes grown to Pertaringa's superlative vineyards.

Pepperjack are an honest representation of the Barossa's rich viticultural heritage, enjoyed equally as much outside of Australia as they are at home. The dedicated Pepperjack team have respect for traditional winemaking techniques, are dynamic, imaginative and highly attuned to the timeless standards of excellence and style. A profound purple effervescence, vibrant perfumes of lifted red berry fruits, raspberries, liquorice and cassis, spiced cloves and fresh, dark cherry bonbons, a palate that's expansive, opulent and plush, layers of jet black fruits, a splendour and grace that goes on and on.

So popular are the wines of Pepperjack, that the label hosts its own society of dedicated enthusiasts. This devout cohort of zealots, converges at bespoke venues to discuss matters Pepperjack, they dine on prime beef and imbibe in their cherished libation. Established by one of the nation's most eminent winemakers (Nigel Dolan, twice Jimmy Watson and thrice Stodart Trophy), Pepperjack now take the pick of Langhorne Creek Shiraz, for a wine of fantastic minerality and fine chalky tannin, fashioned to flatter and embellish the finest Porterhouse.

Pepperjack is a tribute to the rich heritage of Barossa Valley. Pepperjack's dynamic and imaginative team are masters of traditional winemaking practices. Conscious of modern styles and contemporary tastes, they have crafted a ripe, fruit driven Chardonnay, cannily treating separate components to various techniques. Pepper Tree have strayed from their wineworks at Pokolbin to secure harvests of Terra Rossa Shiraz which are second to none. The team know from good fruit and have a good eye for terroir, their splendid vines planted to Wrattonbully's Gravels Block grow a superior quality of Shiraz, characterized by controlled power and stealthy tannins. Flavour maps which have been generated for the vineyard demonstrate considerable variance, assisting the team to isolate individual sections for the production of a wine exhibiting generosity and charm.

Wrattonbully makes Merlot of exceptional character and flavour, arguably the finest and most consistent annual yields in Australia. The wines are distinctive for their blueberry, plum and mint character, sound structure and velvet tannins. Pepper Tree's Merlot vines are fortuitously planted to heavier clay soils at the toe of the main Wrattonbully dune, as heavy clays have proved to be the best soils for Merlot in its traditional home of Bordeaux.
