Established to deep red basalt soils by family Shelmerdine in 1985, Lusatia Park at Woori Yallock in the upper reaches of Yarra Valley, is a very demanding site. Vines are all closely planted and require a lot of work but the quality of harvest is spectacular, consistently yielding vintages of urbane, mineral infused Chardonnay. Fruit is all hand picked and whole bunch pressed, treated to full malolactic and battonage. The Shire of Nillumbik is steeped in history, dotted with villages and towns, each with its own special magic. An exclusively estate grown wine, the eight acre Redbox Vineyard was originally planted to Chardonnay in the 1980s, it's mature vines yield an elegant, creamy style. Delightful peach and stone fruit aromas are supplemented by tropical fruit characters, making Redbox the ideal accompaniment to richer white meat and cheese pasta recipes.

The merry widow? Ned Kelly and his gang laid siege to the Glenrowan Inn, a small hotel thirty minutes northwest of the King Valley, which was run by Widow Ann Jones. The gang held over sixty people hostage in the hotel. The Widow Jones threw a wonderful party for the bushrangers and their captives. A great night was had by all in what turned out to be Ned's last stand.

One of the earliest wine grapes on historical record, a small parcel of Fiano was planted to a lofty hilltop site with breathtaking vistas of the surrounding vineyards at Myrrhee in Valley King. Treated to an old world style, wild yeast barrel ferment, lees stirring battonage and eight months of age in a selection of seasoned French oak barriques. Feijoa, basil and lemon, thyme, supported by subtle creamyness and a fine seam of crisp minerality, a splash of varietal sibling Garganega contributes yet another layer of interest to an intriguing wine.

The frigid climes and inhospitable terroirs of Cromwell Basin are idyll for Sauvignon Blanc of defined Central Otago regionality. Rabbits and livestock coexisted on the Central Otago sheep station for many years, but the four legged grazers couldn't keep up with the nocturnal activities of wild bunnies and became hopelessly outnumbered. They were driven off the land and were last seen heading north. The owner of Rabbit Ranch tried a number of measures to clean the property of rabbits but was unsuccessful. In the end, Mr McGregor decided to find a recipe for rabbit, appetizing to all, which would rid him of his rodent problem, while providing a suitable culinary match to his own, home grown Pinot Gris wine.

Ra Nui believe that the wine is in the grape, focus is primarily on the vineyard, everything that comes after is meant to capture and preserve quality of fruit. Grapes are grown to the time honoured traditions of healthy soils, ample sun and good old fashioned love of the job. Much of the harvest is picked by hand, to be treated to a combination of new and old world vinification techniques, the ultimate aim being being to achieve a Sauvignon Blanc as articulate as a cornucopia of freshly cut fruit, decidedly Marlborough in a glass.

The idyllic hillsides of Langhe are the most felicitous winegrowing climes in Piedmont, amongst the finest viticultural precincts in all Italy, it has been this way for millennia. Alfred Prunotto established a peerless reputation for quality by isolating and retaining the most exquisite sites, his heirloom vineyards continue to outperform. From a single parcel of late ripened Pinot Gris, planted to a steep half hectare block on Prophet's Home Vineyard. The recipe for making Vin de Paille dates back to 800BC, grapes are selectively hand picked onto racks and dried in the loft of a barn for several weeks, slowly whole bunch pressed and treated to thirteen months of ferment through the action of wild indigenous yeasts. A beguilingly layered and complex wine of extraordinary freshness and imposing structure, only sixty dozen bottles are made with each vintage.

An assemblage of parcels Pinot Gris from the Home and Rocky Point vineyards, two warmer sites of Central Otago which yield a magnificently aromatic Pinot Gris. Hand picked grapes are whole bunch pressed and treated to an Alsace style of vinification, wild yeast ferments in small vessels followed by an extended term of age on sedimentery lees for texture and palate richness. Listed on Heston Blumenthal’s Fat Duck winelist and Winner Air New Zealand Fine Wine, Prophets Rock Pinot Gris is defined by its wonderful quince perfumes, mineral structure and remarkable freshness.

Prophet's Rock are a member of Sustainable Winegrowing New Zealand, the aim is to make the most articulate Central Otago wines in the most natural way, from fruit grown to an environmentally balanced vineyard. There's a single hectare of Riesling at Rocky Point vineyard, planted to opportune schist rock soils, it receives a lot of attention from the devout vineyard team. Yields are extremely low, averaging only 300 cases per vintage. A wild yeast ferment in small vessels and a term of age on sedimentery lees makes a structured Riesling style of vibrant floral citrus over strong underlying minerality.

Pressing Matters attenuate their Riesling with supple variations around the time of picking, vinification temperatures and completion of ferments. Here's the perfect level of sweetness to titillate and excite the most discerning enthusiast. Just nine grams residual sugar are enough to enhance the palate with richness and complexity, add ripeness to the flesh and perfumes to the bouquet of juicy fruit.
