Whole bunches of grape are gently pressed to reserve the purest free run juices, vinified to the action of wild indigenous yeasts in a high proportion of new French oak barriques, hogsheads and puncheons. Stone fruits and honeysuckle are deftly integrated with nutmeal, lemon curd, fondant oak, fine mineral texture and extraordinary palate length.

The Hoddles Creek property is a highly challenging site to manage, the steep slopes and temperate climes however, yield the finest Yarra Valley Pinot Gris. Nothing is done by half measure, the viticultural team afford great reverence for their vines and treat their fruit with respect. Grapes are selectively sorted and treated to a minimalist, old world vinification, foot stomped and chilled for a term of skin contact, pressed into pre loved oak barriques for timely completion of ferments. Pinot Gris for its own sake, a measure of stalkiness and fine grape tannins in exquisite balance.

Hoddles Creek Estate were established 1997 when the D'Anna family planted vines on property they had the foresight to acquire in 1960. Estate winemaker Franco D'Anna attributes his traineeship at Coldstream Hills, for the rigorous hygiene practices which are fundamental to the excellence of Hoddles Creek wine. Grapes are all hand picked and gently pressed, PInot Blanc loves to do its own thing for maximum expression, allowed to commence a natural ferment and six months gross lees, building substantial palate structure, juicy textures and a measure of pastoral funk.

A collation of parcels, selectively picked off choice sites throughout Eden Valley, are all managed by a canon of long term owner growers who specialize in Chardonnay, presenting a rich tapestry of flavours to create individuality in the finished wine. A variety of clones are treated to a wild indigenous yeast ferment and a term of age in a selection of seasoned and new French oak barriques, before the final assemblage.

One of Marlborough's oldest and most venerable estates, Highfield was established to grazing and agriculture in 1935, at a time when there was no such thing as Marlborough wine. Following gossip of a successful North Island winemaker surveying local sites for viticulture in the 1970s, Highfield was planted to its first acreage of vine. A rogue clone of Sauvignon Blanc proved so successful, that it became the style around which Marlborough wines are based. A remarkably clean and aromatic, tropical kiwi nose and palate, Highfield endure to this day.

The hills surrounding Adelaide were planted to some of South Australia's very first vineyards in the 1800s. Most of these have since disappeared, but the cool climate and fertile slopes of the Adelaide Hills now provide the idyllic growing conditions for truly world class Sauvignon Blanc. Fruit is grown on Hewitson's own vineyard between Hahndorf and Mount Barker. Yes, there really is a Peggy's Hill and she's a local landmark atop the range between Eden Valley and Keyneton. Peggy's Hill Riesling is vinified from fruit grown by a qabal of traditional growers, Henschke paladins whose vines are up to fifty years old, planted to low vigor ancient Cambrian soils at 500 metres altitude. Eden Valley Riesling is well known for its exceptional varietal and regional characteristics. Peggy's Hill is crafted to be primarily fruit driven, bottled immediately after fermentation to retain all the essential Eden Valley Riesling expressions.

A pure varietal wine from grapes grown by David and Annette Innes at Littlehampton. Viticulture was first established in the Adelaide Hills in 1839 by John Barton Hack at a place near Mount Barker, just five kilometres from Littlehampton. It has been recently rediscovered as a winegrowing area. Littlehampton is an ideal site to practice organic viticulture, and responds well to biodynamics for keeping the vines healthy. Pinot Gris has been well received by the soils and climes here, where it ripens to plump varietal flavours and a judiciously crisp acidity.

Cyril Henschke developed a reputation for premium Riesling wines as early as the 1950s, after a series of memorable vintages fashioned from fruit grown to splendid Eden Valley vineyards. The dry, food oriented styles of Springton and Keyneton are naturally endowed with a capacity to evolve delicious toasty marmalade flavours. The mesoclimes are blessed with ideal ripening conditions which form intensely flavoured esters in the grapes. Julius has been named for a Henschke ancestor, a highly acclaimed artist and sculptor.
