Houghton have been famous for their rejuvenating white wines since colonial times, called upon by pioneers and early settlers to quench their thirst after a hard days labour. Exported to the British Empire, they earned a reputation for excellence and established their trademark as the red stripe brand. Semillon and Sauvignon Blanc is a wine that West Australia does best, choice parcels are assembled by Houghton into the classically dry, early drinking accord of citrus, herbaceousness and slate, complemented by a touch of punchy gooseberry fruit.

A revitalizing cépage of Semillon and Sauvignon Blanc, Riesling, Chardonnay and Pinot Gris, from fine vineyards in Eden Valley and the distinguished Henschke Lenswood property at Adelaide Hills. This adroitly, hand chosen kaleidoscope of parcels is fashioned into a seamless wine, of stunning bouquets and engaging palate, named in honour of great aunt Ottilie Mathilde Henschke. Like the many remarkable women of an era when daily life was a far cry from the ease of today, she grew her own produce while raising a large family.

Two thirds Semillon grown to Henschke vineyards on Eden Valley, vinified around a solid backbone of topical Adelaide Hills Sauvignon Blanc from the distinguished Henschke property at Lenswood. Named for Eleanor Hill who married George Crossman Thyer in 1848, the grower who pioneered and developed Henschke's original Eden Valley site. Rich, spicy citrus flavours line the palate, crisp acidity, fine length and exquisite balance, take Eleanor out for the freshest fish or lightly spiced Asian faire.

Block 1 is a steep gravelly slope of old, dry grown Semillon Sauvignon vines, amongst the first ever planted in Margaret River, yielding a very small crop of the most articulate Semillon and Sauvignon Blanc with a depth of flavour and intensity rarely seen. Only the purest free run juice are treated to a rich course of barrel ferments in seasoned French oak, followed by a term of eight months maturation. Lemony mineral, mesmerizingly complex with underlying toastyness, an amazing palate extension of gooseberries and lychee lingering to a clean ultra dry finish.

A prolific winner on the national wine show circuit, in classically dry Margaret River styling. Sourced exclusively from the estate's Five Ashes Vineyard, most notable are it's juiciness, freshness and restraint, affording excellent mid palate depth. Mealy hints and excellent texture are bound tightly by a tantalising natural acid zing and minerality, finishing long and flavoursome.

Predominately from the Zerk Vineyard, owned and operated by a fourth generation Barossa grower who knows his Semillon very well. As the vines are over seventy years old, they produce grapes with great depth, flavour and complexity. Fraser Gallop aim to create a wine which has true elegance, fine texture and ample complexity as well as lively, fresh fruit character. Semillon is sourced from Wilyabrup where it can mature past the green, herbal notes to the riper spectrum of flavours such as lemongrass and quince. Sauvignon Blanc comes from the cooler sub region of Karridale, an area which produces finer, more elegant berries with fresher flavours. The classic Margaret River white style, eminently drinkable upon release, a wine which is more than just simple fruit flavours.

Alan and Noni Plunkett planted a small, unirrigated vineyard on Strathbogie Ranges in 1968, the first in the region. Today, the Plunkett Fowles vineyards occupy over five hundred acres of the choicest ground. At 490 metres above sea level, the vines are stimulated by the coolness of spring to produce small berries, while in summer the low rainfall and intense sunshine nurture fruit that is dense in colour and flavour. Cool and crisp, with a hint of the tropics, 490m is a refreshing Sauvignon Semillon, ideal for chilling with friends.

The classically dry Margaret River style, though pleasingly not completely dry, Forester Estate is saturated with fully ripe, rich fruit, unfettered by any oak. Semillon and Sauvignon Blanc is sourced from neighbouring properties in the northern Yallingup sub region of Margaret River. Direct input from Forester's viticulturist ensures well balanced canopies and crops are grown for this ripe and judiciously unwooded white. A highly regional, vital white wine that goes down easy with seafood, approachable and satisfying, innately suited to good Al fresco cuisine.

With an abundance of clean water and healthy vines set against a backdrop of karri and jarrah forests, the picturesque Fonty's Pool vineyards are named after a huge dam built in the 1920s. Originally a vegetable farm which operated for over a century, the property was identified by the Cape Mentelle winemaking team as an outstanding site for growing wine grapes. A lively fruit driven style was achieved by handling the fruit with care and respect. Partial barrel fermentations and wild yeasts have enhanced the wine with texture and complexity.

Two thirds Sauvignon Blanc, the balance of Semillon, are sourced from good vineyards in the Wilyabrup and Karridale subregions of Margaret River. Parcels are selected on the basis of the desirable characteristics that they can bring to the final wine. Wilyabrup contibutes lovely lifted tropical aromatics whilst Karridale makes for a fine and elegant palate structure. An invigorating, light style of white that's refreshingly unwooded and unoaked, with a touch of sweetness to achieve a lovely gentle finish, food friendly and ideal for all occasions.

Flametree maintain a close working relationship with the most dedicated Margaret River growers. The driving philosophy is to craft wines which express the quality of fruit and uniqueness of provenance, while striking the balance between early approachability, generous flavour and sound structure. Embers is a mostly Semillon wine, it's drying, slatey mineral palate and bouquet is vitalized by a third of Sauvignon Blanc, which adds ripe tropical fruit with a measure of herbaceousness. Drink now alongside papardelle primavera or fresh crustacea.

The Margaret River's salubrious maritime climate of mild, wet winters and warm, even summers, produces Sauvignon Blanc that's more tropical in style than the grassy herbaceousness of cooler districts. De Bortoli can proudly claim to have written the book on Australian dessert style Semillon. Each year, the award winning team singles out the most appropriate parcels of Semillon, where the best conditions exist to let grapes hang on the vine until they have been affected sufficiently by Botrytis cinerea. De Bortoli hold an extensive collection of barrel aged wines. Stocks of fortified and botrytised Semillon are drawn on from time to time to assemble into a wickedly decadent wine of rare opulence. Black Noble has most notably claimed Gold and Silver at the prestigious London International. Created by Darren De Bortoli, it is an inspiration from a 1930s wine made by Vittorio De Bortoli. Black Noble is extraordinarily unique and has been compared to the great wines of Jerez.

The effect of Noble Rot or Botrytis cinerea is to make the skin of grapes porous, and given the correct weather, shrivel. The wrinkled grapes are intensely sweet and full of character, producing wine with a wide array of fruit characters. Ever the prankster, Chester Osborn has stepped outside the usual sticky suspects of Riesling and Semillon to make a Chardonnay Semillon blend. It may look like a normal sticky, but look again, sticky Chardonnay can be majestic, often difficult to achieve in the cool climate of Adelaide Hills.

Cullen are driven by a passion for purity of fruit and perfect balance in the finished wine. Grapes are picked by hand off vines grown to a strict environmentally friendly philosophy. All wines produced at Cullen are certified as biodynamic, carbon neutral and naturally powered. Cullen vary the ratio of Sauvignon Blanc to Semillon with each vintage according to how the varietals perform. Grapes are individually sorted and fermented to indigenous yeasts, with no acid additions and limited fining, permitting the expression of terroir to have a stronger voice in the glass.

Cullen's splendid Margaret River vineyards are cultivated to represent the purest environment in the world, renowned for white wines of character and charm. Climes are similar to that of Bordeaux and the vines positively flourish. Cullen will vary the proportion of Sauvignon Blanc to Semillon according to performance. Picked at healthy levels of baume, crushed and inoculated to mostly indigenous yeasts, a minor component is vinified and matured in French oak, while the freshness and vitality of Margaret River fruit is retained through a course of vinfication in controlled fermenters. Pungent, piercing and linear bouquet, the delicious flavours lead in to a long and particularly fine acid finish. Already drinking very well, will continue to evolve, a good choice today alongside gourmandise style crustacea and the freshest fish.

The Thomson family share a long history with the agriculture of Victoria's western districts, winemaking has been a family tradition since the nineteenth century. The Thomsons have an eye for the land, in 1975 they settled on a splendid site in Victoria's Henty region and planted vines. In exceptional vintage years, if the quality of harvest merits a pure Semillon wine, the choicest parcels are set aside for an extravagant barrel ferment in French oak and extended term of contact on sedimentery lees. A Semillon of remarkable complexity, elegance and finesse.

From time to time at Crawford River, when vintage conditions are just so, the capricious botrytis cinerea blights a parcel or two of Semillon and Sauvignon Blanc grapes. This however can be a blessing of nature, if a spell of clear skies and sunny days, just before the time of picking, works its magic by drying out the berries and intensifying the natural sugars. The uniquely favourable mesoclimes of the Henty region are heaven sent for white wines, even more so when mother nature sets the stage for a toothsome sauternes style to rival the very finest.

Exactingly fashioned from parcels of Semillon grapes, hand picked off dry grown vines, an exquisitely fragrant wine with a serious weight of palate, deliciously reflecting the cooler, balmy maritime breezes which rejuvenate the vineyard. The quality of fruit at Crawford River is the product of a painstaking approach to viticulture and careful management of crop levels throughout the growing season. The concentration of flavours and finely attenuated acidity offer great opportunty for growers with the nerve to tough out the extended vintages at Henty.
