Smith's Rare Glenlivet was treated to maturation in a selection of Sherry oak casks, before filling to a unique bottle under distinctive labelling, for an extended term of bottle age.

Australian Sake brewing commenced in 1988 when Sun Masamune, owned by Konishi Brewing Co of Itami Japan, alongside the Australian Rice Growers Co-operative, began testing a small plant at Leeton New South Wales. In 1996 Sun Masamune started commercial operations at a purpose built facility at Penrith near Sydney. Konishi, renowned in Japan for their Shirayuki brand, have combined their 460 years of brewing expertise with the latest in sake production technology to create high quality and palatable Ginjo Sake in Australia.

Glenrothes is universally acclaimed by industry peers as an exceptional Speyside Malt. Only a small number of vintages have been released, such is the exceptional quality required. Each vintage is, by definition, rare and finite. Each has its own unique personality. Of the Vintages produced to date, many are no longer available. They've been sold, imbibed and greatly enjoyed. Vintage 1994 contains the character and complexity so distinctive of Glenrothes, with an added zestiness which may pleasantly surprise even the most regular of Glenrothe enthusiasts.

The latest Vintage from the early 1990s, 1991 is less formal than the 1992. While you might imagine this Vintage would be similar to the 1992, there is a world of difference. The hallmark Glenrothes characteristics are all there, but the emphasis is on vanilla, butterscotchy flavours. Enticing, open and refined it is lively and spicy on first meeting followed by a fruity voluptuousness and with water, liquorice and Demerara sugar evolve in a smoothing and rounded finish. Vintages of Glenrothes from the 1970s and 1980s are increasingly hard to come by. Glenrothes 1998 is one of that rare breed. Never before bottled, Vintage 1998 is matured in a combination of Spanish and American oak cask butts which have previously been seasoned by stocks of Sherry and Whisky. The combination of oak complexity and Single Malt gives the citrus notes a delicious cooked orange flavour and plenty of fruit, the latest addition to the very rare selections of the 1990s.

Glenmorangie Distillery remains one of the smallest in the Highlands, employing just sixteen craftsmen the Sixteen Men of Tain. The earliest reference to distillation at the Glenmorangie whisky mills was circa 1703, gazetted within the Tain and Balnagown Documents. The traditional distilling methods, established three centuries ago and preserved through the generations, are meticulously employed to this day.

Nàdurra is matured in Oloroso Sherry oak casks from Jerez. The Sherry soaked wood introduces the rich, sultry flavours of dried fruit and warm spice. Nàdurra Oloroso is bottled and released in small batches, non chill filtered and straight from the cask. Bright, vivacious gold liquid, notes of dried fruit and spice, creamy and smooth, chocolates and marmalade. A divine articulation of the synergy between Spanish oak and Speyside Malt. Dried fruit, raisins, apricots, cinnamon, liquorice, long and sweet, spicey and ingratiatingly dry finish.

Nàdurra means natural, The Glenlivet’s range of small batch expressions made to 19th century techniques. First Fill is drawn from casks of American white oak, which impart creamy vanilla to the wonderfully rich Single Malt, complemented by sweet pear, pineapple and ripe banana. First Fill is a cask strength Malt, non-chill filtered and richly textured. A perfectly balanced display of fruity and floral characters, oak is present but in the distance. A warm experience of the fresh and fragrant air that breathes freely around Speyside.

The Glenlivet 21Year Old Archive is an extremely limited small batch Whisky, aged in a selection of fastidiously hand chosen casks. As it ages, the Spirit develops many layers of flavour, a rounded aroma and creamier texture. Archive is a complex Whisky showing sherry and wood notes integrating seamlessly with the aromatic palate. At The Glenlivet, when they talk about Whisky, it's clear that age matters. Age is important as most of the flavour comes from ageing in cask. This is why at The Glenlivet, only the very finest oak is used. Selective maturation in new French Limousin oak casks creates a characterful and unique expression of The Glenlivet. Situated near Edinburgh, Glenkinchie is one of the last active distilleries in the Lowlands. Originally named Milton Distillery, it was founded in the 1820s and changed hands several times before being sold to a local farmer who converted the Distillery into a sawmill and cow shed. When the consumption of Whisky resumed in the 1880s, the distillery was restored and it became part of the Distillers Company Ltd in 1914. Obscure for many years, Glenkinchie has became famous as a refined Single Malt, an essential component to Johnnie Walker and Haig, Dimple and Buchanan.

William Mitchell founded the Glengyle Whiskyworks on Glebe Street at Campbeltown in 1872, a century and a half later, his great great nephew re established the site as a working Distillery. Work In Progress represents an opportunity to engage with Glengyle's Kilkerran Malt, as it evolves from year to year. Edition number three was bottled in June 2011 at a highly satiating Cask Strength 46%, a decidedly fruity style of Malt, honeyed with ginger notes, apples and pear, a judicious measure of peated tobacco smoke, savouryness and the chill of North Atlantic brine.

One of Scotland's delineated Whisky regions, there were once over thirty Distilleries at Campbeltown, it is now home to only three, Glengyle is the most recent to be brought back to life after generations of disuse. Campbeltown Malts are defined by their provenance, distilled and matured within sight of the high seas, they are infused with maritime influences, iodine and brine. The second edition of Glengyle's evolving Malt, characterized by its pleasingly fruity, vanilla sorbet character and lingering tradewinds finish, a mere 1500 dozen were produced.

A Campbeltown sibling to neighbouring Springbank, Glengyle Distillery have been renovated and refurbished by the Mitchell clan, after a term of use as rifle range, with a view to breathing new life into a historical Whiskyworks. Kilkerran is a pure Single Malt, a work in progress, as the Whisky making techniques are refined from year to year. The inaugural 2009 edition of 9000 only bottles, already a collector's classic, lively, zesty and full of flavour, its characteristic Campbeltown brinyness and hints of smokey peat, resolve on a lingering, creamy vanilla finish.

Glenfiddich is the only Highland Scotch whisky to be distilled, matured and bottled at its own distillery. Glenfiddich Solera Reserve 15 Year Old is a distinguished and exceptionally crafted Single Malt, matured to perfection in three different types of oak casks. Aged sherry casks, traditional bourbon whisky casks, as well as new oak casks coopered from American timber, are carefully selected by the Glenfiddich Malt Master for painstaking maturation, thereby ensuring the smoothness and depth of flavour that are the characteristic hallmarks of the Glenfiddich Solera Reserve.

Snow Phoenix has arisen out of an episode of drama in the long history of Glenfiddich. It all began in December 2009 when it started to snow and kept snowing for several months. After weeks of record low temperatures and alternate freezing and thawing there were four feet of densely compacted snow on the distillery roofs. The Glenfiddich Malt Master selected a number of casks from the snow damaged warehouse, some of these had previously held Oloroso sherry and others were traditional whisky casks made of American oak.

The most unique Single Malt, delicately finished in a selection of brand new American and Spanish oak casks after being patiently matured for a term of fourteen years. The extravagant use of untouched Spanish oak casks is a first for Single Malt Scotch Whisky. Alive with flavour, these new casks require precision handling by the Glenfiddich Malt Master to deliver just the right amount of extra flavour, creamy vanilla, a supple toffee sweetness and spicy oak with layers of ripe summer fruit, creating a rich and engaging, complex Single Malt.

Project XX was so secret that the panel of peers didn’t even know they were participating. Given free reign of the Glenfiddich Conval Warehouse, each expert chose a Malt which most intrigued them, including stocks from Port pipes, American oak and pre loved Bourbon barrels. Project XX embodies the warm, timeless fruityness of Glenfiddich, apple blossom, summer fruits and pear. Candyfloss, cinnamon spice, almonds and rich port tannins with the odd whisper of liquorice, mellow and deep, the finish is ever lasting on a lingering note of sweet oakiness.

A faithful remake of the original 1963 Glenfiddich Straight Malt, assembled after a selection of aged Whiskies, based on a recipe by Sandy Grant Gordon, uncovered from the Glenfiddich family archives. Gordon was a visionary, bringing the splendour and refinement of Scotland's exquisite Malts to the world, he changed the way Whisky will be appreciated forever. The invaluable stocks of Glenfiddich mature in stores of Sherry oak cask, until called upon by the Malt Master, for recreation of the original blend, then as now, a spirit of exceptional character, elegance and charm.

Glenfiddich is the world's most awarded Single Malt and one of the few distilleries to remain entirely family owned. Malt Masters Edition commemorates the personal journey of Glenfiddich's Brian Kinsman from apprentice to one of Scotland's leading Malt Masters. Glenfiddich resurrects the lost tradition of maturation in rum casks with the Gran Reserva 21 Year Old single malt Scotch whisky. Rum distillers from Sancti Spiritus, near the Sierra del Escambray in the heart of Cuba, worked with the Glenfiddich Malt Masters to develop this unique Cuban rum finish. Glenfiddich decant casks of Cuban rum at the distillery and refill them with 21 Year Old Glenfiddich to absorb the unique character lingering in the wood. The aged and infused Single Malt is then bottled at the precise moment when the unmistakable Glenfiddich flavour reveals a new and vibrant overtone.
