Better soil maintenance with no herbicides and more composted material, while leaf plucking is applied earlier in the season and more diligently. The maturity of the vines, management of the property and evolution in the quality of fruit all impact on the excellence of the finished wine. Its long and fine, chewy structure is dominated by bold varietal fruit characters, while the background gamey nuances intensify the palate, along with subtle earthiness and sweet spice undertones.

Fire Block was excised from a large grazing property in 1923, out of concern that sparks from passing locomotives on the new Clare Valley railway could start bushfires. Three different soils were identified as free draining with low fertility characteristics, influenced by the unique Central Otago growing season to yield an extraordinary quality of Pinot Noir.

Euroa Creeks is a hand crafted single vineyard Shiraz, only sixty cases of the inaugural vintage were available in Australia. The eight acres of vine are nourished by a number of creeks that have traditionally brought just enough water to make the land arable. In recent years the area has been drier than usual, vines have truly struggled and tonnages are at their lowest, but the grapes have been packed with flavour. Vintage 2006 was an almost perfect growing season and 110 cases of Reserve were produced. Vintage 2007 was totally wiped out by frost.

In 1934 Oscar Semmler purchased a vineyard and grazing property across the road from where he and his brothers grew up, at the southern end of Lyndoch in the Barossa, alongside the St. Jakobi Lutheran church and school. From a mere thirty two rows of vine, planted on six acres in 1975 by Oscar's son Ken Semmler, the site is blessed by a harvest of the most outstanding quality fruit every year. St Jakobi Shiraz makes a wine that's rich in spice, dark cherry and chocolate characters, offering great tannin structure for longevity in the bottle.
